Cajun Style Blackened Carp 1 or 2lbs fillets or whole 1/2t cayenne pepper (to taste) 1/2t dried thyme 1/2t dried French tarragon 1/2t dried oregano 1/2t salt 1/4t black pepper 1 1/12t paprika 1 onion (chopped fine) 2 garlic cloves (chopped fine) 1T olive oil 1T butter Add into a small container mix the cayenne, thyme, tarragon, oregano, salt, black pepper & paprika. Sprinkle both sides of the carp with the mixture coating it very well. Saute' the garlic & onions in the olive oil until it is light brown. Add the butter and let it melt and blend. Then add your fillets and cook for about 5 minutes or until the fish is cooked. (If using whole fish, you may want to add more oil & butter). After fish is done, place on a plate with lemon slices as a garnishment. ***Would have uploaded picture of this delicious meal but it didn't last long enough.***
