Has anyone eaten Zander form British waters? I remember having it while at a restraunt in Bulgaria. It was delicious, and seems to be popular there. Also it's quite highly favoured as food in Canada, where its known as Walleye. Definetely could see it doing well if it was marketed properly over hear. Zander and chips! Could be the answer to the vanishing cod.

Another dish in the angler's restaurant could be Cormorant a'la orange. ;D Perhaps with a few less Zeds and a lot less of the Black Death there would be many more of the small species surviving.

Hopefully, I never have to kill a zander unless it is at the last resort but I found this one while surffing the net
Christian Sandefeldt’s Pan-fried Zander
Ingredients:
180g Zander Fillet (per person) salted butter seasoned flour lemon to serve
Method:
Skin the fillets and cut into 180g portions. Lightly coat the fillets in seasoned flour. In a pan over a medium heat place a good knob of salted butter. Wait for the butter to foam up, by which time it will be a nutty brown colour. If the foam dies down add a little more butter to keep it alive. Cook the fillets for 1.5 minutes on each side. Plate up with the butter from the pan, half a lemon and serve with steamed seasonal vegetables and new potatoes.
